Thai Kebabs with Satay Sauce

- 1 small pork llet 2 small skinless chicken

breasts 12 large cooked, peeled shrimp Marinade: 2 tablespoons soy sauce 2 tablespoons honey Juice of 1 lime a few drops Tabasco sauce 1 clove garlic �-inch piece fresh ginger Sauce: 1/2 onion �-inch piece fresh ginger 1 clove garlic 1� tablespoons vegetable oil 1� teaspoons soy sauce 3 tablespoons water 1� tablespoons light brown sugar 5 tablespoons peanut butter Juice of 1 lime Salt if needed Soak bamboo skewers in water for 30 minutes.

Cut the pork into thin diagonal slices, then cut each slice into narrow srips.

Flatten the chicken breast with your hands, then carefully cut them into strips about 1 in w i de.

Put the soy sauce, honey, lime juice, and the Tabasco into a bowl.

Crush the garlic, peel and grate the ginger, and stir them in.

Pour the marinade into 3 bowls.

Put the pork, chicken, and shrimp into the 3 bowls, turn them, and let marinate.

Peel the onion and chop it ver y nely.

Peel the ginger and grate it coarsely, then peel and crush the garlic.

Heat the oil in a saucepan.

Cook the onion gently until soft.

Add the ginger and garlic and cook for a few minutes.

Put the onion mixture, soy sauce, water, sugar, peanut butter, and lime juice in a bowl and whisk.

Add salt if needed.

Thread the shrimp onto skewers.

Fold the strips of pork and chicken and thread them onto separate skewers.

Grill the pork and chicken for about 4 minutes on each side until brown.

Grill the shrimp for about 1 minute on each side.
