Enchiladas

Ingredients
- 1 tbsp olive oil 1 small onion, diced
- 2 shredded, cooked chicken breasts
- 1 tbsp taco seasoning
- 2 cup canned Mexican red enchilada sauce
- 15 -ounce can black beans rinsed and drained (optional)
- 4 �-ounce canned green chiles
- 8 oz shredded fajita cheese
- 10 corn tortillas(or our if you prefer)
Instructions

Season chicken breast with salt and oil and bake in oven until cooked to 165�.

In a bowl combine shredded chicken, diced onion, taco seasoning, black beans, green chilies, half the fajita cheese, and � cup of the enchilada sauce.

Pour � cup enchilada sauce in bottom of 13x9 pan.

Place chicken mixture in center of torillas and roll up, placing in pan, seam side down.

Pour remaining enchilada sauce over rolled enchiladas.

Then sprinkle remaining cheese on top.

Bake 350� until hot and bubbly.
