Toasted Apple, Gruyere, and Caramelized Onion on Ciabatta

- 1 Yellow Onion
- 1 Garlic Clove
- 1 Romaine Heart
- 1 Red Delicious Apple
- 2 Ciabatta Bread Rolls
- 4 Gruyere Cheese Slices
- 1 oz Apricot Preserves
- 1 ½ oz Mayonnaise
- 1 tsp. White Wine Vinegar
- 1 oz Grated Parmesan Cheese
- Olive Oil
- Salt Pepper
- Halve and peel onion. Slice halves into thin strips
- (julienne). Mince garlic. Hold romaine at root end

Cook Within: Caramelizing onions is one of cooking’s most satisfying transformations. Be sure pan is over medium heat and avoid stirring during first 3 minutes. After that, stir regularly to promote even browning. Gruyere is a sweet and slightly salty cheese from Switzerland. It’s ideal for melting and is commonly broiled atop French onion soup.

Prepare the Ingredients: Halve and peel onion. Slice halves into thin strips (julienne). Mince garlic. Hold romaine at root end and chop coarsely. Core apple and cut into ¼” slices. Halve ciabatta rolls.

Top bottom ciabatta slices with caramelized: onions, apricot preserves, and apple slices. Top with other ciabatta slice. Press down lightly on sandwich to marry layers together. Caramelize the Onions

Heat 2 tsp. olive oil in a medium pan over medium: heat. Add onions to hot pan and cook undisturbed 3 minutes. Then, stirring occasionally, cook 8-10 min- utes, or until deeply browned. Season with ¼ tsp. salt and a pinch of pepper and remove to a plate or bowl.

Make the Salad: egar, half the Parmesan, garlic, and 2 Tbsp. water. Season with ¼ tsp. salt and a pinch of pepper. Add romaine and toss to combine. cut side up, and top with Gruyere cheese. Place in broiler and broil 2 minutes, checking regularly (to avoid burning cheese), until cheese is melted and begins to brown. Remove from oven.

Plate the Dish: Halve sandwich and serve alongside Caesar salad.

Garnish salad with remaining Parmesan.: recipe–it has bigger grains and is easier to pinch than table salt, allowing more control over flavor. If using regular table salt, reduce measured amounts used twice in this recipe. Half goes in Caesar dressing and remainder garnishes salad. • Don’t text and broil!
