Bring a medium pot with 4 cups salted water to a boil over high heat. Add cauliflower florets and simmer 5-6 minutes. Strain cauliflower thoroughly in colander, pressing out excess water. Rinse steaks and pat dry. Season both sides of steaks with a pinch of salt and pepper. Make the Sauce Robert: In the same pan used to sear steaks, add remaining butter and melt over medium heat. Once melted, add shallots and cook for 2 minutes. Add white wine and cook for 1 minute. Add demi-glace and Dijon and cook for 1 more minute. Set aside. The browned bits that accumulate on the bottom of the pan from searing the steaks are packed with flavor. Cook the Green Beans: Heat 1 tsp. olive oil and 2 Tbsp. water in a medium pan over medium heat. Add green beans to pan. Once beans start sizzling, cover and cook for 5 minutes. Season with a pinch of salt and pepper.
