Good-for-you Meat Loaf

Ingredients
- 1 tbsp olive oil 1 cup chopped onion 6 ounces sliced portobello mushrooms, chopped
- 1 L arge egg 1 tablespoon water � pound lean ground beef � pound ground veal

cup fresh bread crumbs 3 tablespoons nely chopped carrots 2 teaspoons coarse grain mustard 1 teaspoon minced garlic 1 teaspoon salt � teaspoon freshly ground pepper Line 13x9 inch pan with foil and spray with Pam.

Heat oil in 12-inch fr y pan pan on high heat.

Add onions and mushrooms, and cook, stirring occasionally, 6 to 7 minutes, until mushroom liquid has evaporated and mushrooms are brown.

Toss onion mixture with remaining ingredients lightly with ngertips in large bowl.

Shape into 9x4 inch loaf in prepared pan.

Cover with foil; bake in a 375� oven for 30 minutes.

Uncover and bake 25 to 30 minutes more, until center registers 160�.

Let meat stand in pan 5 minutes, and then transfer to ser ving plate.
