Ingredients
- 5 cup peeled, diced potatoes � cup chopped parsley 2 tablespoons butter 2 tablespoons olive oil
- 1 cup nely chopped onion 1 bay leaf
- 1 � teaspoons salt � teaspoon black pepper 1 cup chopped bacon pieces 4 to 5 cups chicken broth

half and half � to 1 cup sour cream Saute potatoes and parsely in butter and oil over medium heat.

Add onion, bay leaf, salt, and pepper.

Cover and cook over low heat until potatoes are slightly tender, stirring occassionally (about 5-10 minutes).

Add chicken broth and continue to cook.

Meanwhile, mix our and cream, and slowly stir into soup to thicken.

Simmer until potatoes are tender, about 10 minutes.

Before ser ving, remove bay leaf, stir in sour cream and garnish with fresh parsely.
