Wild Rice Soup

� cup wild rice, uncooked 2 cups water 2 tablespoons butter 1 medium onion, chopped 1 quart milk 2 cans cream of potato soup 1 pound Velveeta cheese, cut into cubes 10 strips crisply cooked bacon, crumbled Wash wild rice and add 1� cups boiling water, salted to taste, in heavy saucepan.

Return water to boil; stir.

Reduce heat and simmer covered 50 to 60 minutes or until kernels pu open.

Uncover and u with a fork.

Simmer 4 additional minutes.

Drain any excess water.

Yields 1� to 2 cups cooked rice.

Saute onions in butter until tender.

Add water, milk, and potato soup.

Increase heat to medium, stirring occasionally.

W hen mixture is hot, add cheese.

W hen creamy, add wild rice and garnish with crumbled bacon, if desired.
