- 2 Boneless Skinless Chicken Breasts
- 1 tsp. Powdered Ranch Seasoning
- 3 oz BBQ Sauce
- 2 tsp. Sriracha
- 2 Brioche Buns
- 1 ½ oz Swiss Cheese Slices
- ½ oz Baby Arugula
- Olive Oil
- Salt Pepper

Cook Within: If sauced shredded chicken cools too much, return it to pan and reheat 2 minutes over medium- Sweet potatoes are an extremely nutritious starch. They are high in beta carotene and vitamins E and C, plus they are a good source of fiber when eaten with the skin on like in this recipe.

Start the Sweet Potato Rounds: Cut sweet potato into ¼” rounds. Place on prepared into a single layer and bake until beginning to brown, 20 minutes. Sweet potato will finish cooking in a later step. While sweet potato cooks, sear chicken. Sauce the Chicken Once chicken has cooled, use two forks or your hands to shred into bite-sized pieces. Add half the BBQ sauce (reserve remaining for sandwich) and half the Sriracha to chicken and toss to combine. Taste chicken, and add remaining Sriracha if desired. Omit Sriracha entirely if heat averse.

Cook the Chicken: Rinse chicken breasts, pat dry, and season both sides with ¼ tsp. salt and a pinch of pepper. Heat medium-high heat. Place chicken in hot pan and cook until lightly browned, 2-3 minutes. Flip chicken, reduce heat to medium, and cook until chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes. Transfer to a medium mixing bowl and cover with plastic wrap. Allow to cool at least 5 minutes.

Toast the Buns: Place brioche buns directly on oven rack and toast until lightly browned, 2-3 minutes.

Finish the Sweet Potato Rounds: After sweet potatoes have baked 20 minutes, Bake until potatoes are golden brown, 5-8 minutes.

Plate the Dish: Place a Swiss cheese slice on bottom bun. Add remaining BBQ sauce, shredded chicken, arugula, and top bun. Add a serving of sweet potato rounds twice. Half is added to pulled chicken and remaining is added to finished sandwich. hot sauce du jour. Its garlicky- chile flavor complements just about everything.
