Cremini Mushroom and Goat Cheese Tarts

- 4 Puff Pastry Dough Squares
- 6 oz Cremini Mushrooms
- 1 Red Onion
- ½ oz Dried Cranberries
- 1 oz Goat Cheese
- 2 oz Shredded Mozzarella
- ½ oz Baby Arugula
- 1 ½ oz Balsamic Vinaigrette
- Olive Oil
- Salt Pepper

Cook Within: If onions caramelize too much, add 1 Tbsp. water to pan to Puff pastry is a pretty simple mixture of flour, water, and butter. The secret is that it’s rolled, folded, and rolled again many times to form many thin layers of dough separated by butter. As it bakes, trapped moisture turns to steam and “puffs” layers apart.

Prepare the Ingredients: Keep puff pastry in refrigerator until use for best results. Quarter mushrooms. Halve and peel onion. Slice halves into thin strips. Coarsely chop cranberries.

Bake the Tarts: pastry is golden brown and cheese has melted, 10-12

Heat 2 tsp. olive oil in a medium pan over medium: heat. Add mushrooms and onions to hot pan and cook, stirring occasionally, until tender and lightly charred, 5-7 minutes. Remove pan from burner.

Remove tarts from oven and garnish with arugula,: cranberries, and balsamic vinaigrette.

Prepare the Tarts: Place each puff pastry sheet on prepared baking sheet. Use a fork to poke holes in puff pastry. Top each sheet with sautéed vegetables, goat cheese (breaking up with your hands if needed), and mozzarella. Drizzle each tart with ½ tsp. olive oil and season with a pinch of salt and pepper.
