- ⅝ oz Butter
- 2 Zucchini
- 2 Roma Tomatoes
- 1 Green Onion
- 3 Thyme Sprigs
- 2 Salmon Fillets
- ½ oz Honey
- ¼ tsp. Red Pepper Flakes
- Olive Oil
- Salt Pepper

Prepare the Ingredients: Trim zucchini ends, halve lengthwise, and cut into ½” pieces at an angle. Core Roma tomato and cut into ½” dice. Trim and cut white portions of green onion into 1” lengths. Cut green portions thinly on an angle. Stem and coarsely chop thyme. Rinse salmon fillets and pat dry. Season both sides with ½ tsp. salt and season top side with ½ tsp. black pepper.

Make the Hot Honey Butter: Stir together honey, softened butter and red pepper

Sear the Salmon: Add 1 tsp. olive oil and salmon to hot pan, peppered side down. Sear until lightly browned, 3-4 minutes. Flip, cook 1 minute, and transfer salmon to prepared

Cook the Vegetables: Return pan used to cook salmon over medium-high heat. Add 2 tsp. olive oil and zucchini to hot pan. Cook, stirring occasionally, until zucchini is browned and tender, 3-5 minutes. Add tomatoes and white portions of green onion, and cook until tender, 2 minutes. Season with ½ tsp. salt and thyme. Bake the Salmon: firm, browned, and reaches a minimum internal temperature of 145 degrees, 5-8 minutes. While salmon bakes, make hot honey butter.

Plate the Dish: Place vegetables on plate, garnish with green por- tions of green onion, and place salmon in front of vegetables. Spoon hot honey butter on top. recipe–it has bigger grains and is easier to pinch than table salt, allowing more control over flavor. If using regular table salt, reduce measured amounts long way when it comes to red pepper flakes. Add a pinch at first, taste, and add more if used twice.
