Ingredients
- 1 Red Onion
- 2 Pretzel Buns
- 12 oz Ground Turkey
- 1 Tbsp. Miso Paste–Gluten-Free
- ⅓ cup Ricotta Cheese
- ½ fl. oz. Worcestershire Sauce
- 1 ½ oz BBQ Sauce
- 1 ½ oz Cheddar Cheese Slices
- Olive Oil
- Salt Pepper
- Halve and peel onion. Slice halves into thin strips.
- Halve pretzel buns.

Cook Within: For tender burgers, avoid overworking meat by mixing ground turkey until just combined with other ingredients. Miso is traditionally a Japanese ingredient, but chefs love using it in all kinds of preparations to add rich texture and subtly salty flavor.

Roast the Sweet Potatoes: Cut sweet potato into ¼” slices. Place rounds in a with 1 Tbsp. olive oil, and season with ¼ tsp. salt and a pinch of pepper. Roast 15 minutes, remove from oven, and flip potatoes. Roast until tender and deep golden, 8-10 minutes. While sweet potatoes roast, prepare ingredients.

Sear the Burgers: Add 1 Tbsp. olive oil and patties to hot pan and sear until brown, 2-3 minutes per side. Transfer burgers burgers reach a minimum internal temperature of 165 degrees, 9-11 minutes. Reserve pan; no need to wipe clean. While burgers cook, cook onions.

Cook Onions and Toast Buns: Return pan used to sear burgers to medium heat. Add 1 Tbsp. olive oil, ½ tsp. salt, and onions to hot pan. Cook covered, stirring occasionally, 6 minutes. Add 2 Tbsp. water, stir, cover, and cook, stirring occasionally, until onions are soft and brown, 3-5 minutes. Toast buns directly on oven rack until golden brown, 2-3 minutes.

Combine turkey, miso, ricotta, Worcestershire: sauce, ¼ tsp. salt, and ¼ tsp. pepper in a medium 4” in diameter. If mixture is too moist to hold together, use plastic wrap to shape discs. Make a small ½” indentation in middle of patty to keep burger flat

Plate the Dish: Spread BBQ sauce on bottom bun and top with burger, cheddar cheese, onions, and top bun.
