Lemon Meringue Pie

Ingredients
- 2 small or 1 large box of Jell-O Cook and Serve Pudding and Pie filling
- 1 C Sugar
- 4 egg yolks
- 3 ½ cup water
- 1 ½ t Citric Acid
- Meringue
- 4 egg whites
- ¼ tsp cream of tartar
- 6 tbsp sugar
- ¼ tsp vanilla
- Lemon Fluff

In a large saucepan mix pie filling, sugar, egg yolks, citric acid and ½ C water. Stir until mixed well. Add remaining water and mix. Stirring constantly, cook on medium heat until mixture comes to a full boil. Cool 5 minutes, stirring twice. Pour into a cooled, baked pie shell.

Beat egg whites and cream of tartar until foamy. Beat in sugar, 1 T at a time. Continue beating until stiff and glossy. Do not underbeat! Beat in vanilla.
