Ingredients
- 3 eggs
- 1 tsp baking powder
- 1 cup sugar
- 2 tsp cinnamon
- ⅔ cup pumpkin
- 1 tsp ginger
- 1 tsp lemon juice
- ½ tsp nutmeg
- ¾ cup flour
- ½ tsp salt

Beat eggs for 5 minutes with electric mixer. Beat in sugar. Stir in pumpkin and lemon juice. Mix dry ingredients together and fold into liquid. Line cookie sheet(one with sides) with wax paper and grease and flour it. Pour batter in and spread. Sprinkle chopped nuts over top and bake at 375o for 15 min. Sprinkle dishtowel with powdered sugar and dump cake on. Roll into roll and let cool for 5 min. Unroll, remove wax paper, and spread filling over. Then reroll and refrigerate. Cut into sections to serve.
