Reed Ethington's Special Salsa

Ingredients
- 5 lb fresh tomatoes
- 1 tbsp paprika
- 3 large yellow onions
- 1 T Mild Chili Powder
- 3 large Anaheim chiles
- 2 T Salt
- 2 bunch green onions
- 2 tbsp white vinegar
- 1 bunch fresh cilantro
- 1 tsp ground black pepper
- 1 oz can diced green chiles
- 1 tsp cumin
- 13 oz can tomato paste
- 1 t Garlic Powder

Chop tomatoes, onions, Anaheim chilies, green onions and cilantro, then combine in a large bowl. Stir in diced green chiles and all of the spices. Then stir in the tomato paste to thicken and flavor the salsa. Flavor is best if it ages at least 24 hours in the refrigerator. Please note that this mix can stain some of the soft plastics like tupperware or rubbermaid. This is mild and can be eaten with a spoon, but is best on chips and Mexican food. To make spicy or hot salsa, several substitutions can be made. These include 6-8 jalapenos for the Anaheim chilies, hot or red chili powder for the mild chili powder, and diced jalapenos for the chopped green chilies. If desired some of the other fresh hot chili peppers can be included. ie: serrano and habanero chilies, but watch out! Not all of these substitutions have to be made, just make them according to your individual taste.
