Cake: 2 cups sugar 1� cups oil 4 beaten eggs 2 cups our 1 teaspoon cinnamon 2 teaspoons baking soda � teaspoon salt 3-4 carrots, grated 1 cup chopped nuts Frosting: 1 8-ounce package cream cheese, room temperature � cup butter (1 stick), room temperature 1 teaspoon vanilla pinch of salt 1 pound powdered sugar 1 cup coconut 1 cup chopped pecans few drops water or milk, as needed Cream sugar, oil, and eggs.

Mix together our, cinnamon, soda, and salt.

Add to creamed mixture and beat.

Add chopped nuts and grated carrots, (about 3 cups).

Bake at 375� degrees for 40 minutes or more in a 13'x9' pan.

Frost with cream cheese frosting when cool.
