Great Grandma Ethel Richey's Famous Rolls

Rolls : 1 cup milk 3 tablespoons shortening 2 pkgs. active dr y yeast � cup sugar 3 eggs 4-5 cups our, divided 1 teaspoons salt Filling: � cup (1 stick) butter, softened Heaping � cup sugar Grated rind of 2 oranges Scald milk and add shortening, stirring to melt.

Add yeast when milk is cool enough (105� to 115�).

Combine sugar with lightly beaten eggs and add.

Add 1 to 2 cups our to make a sponge and beat until smooth.

Let rise 1 hour, covered with a towel.

Gradually add 3 cups our and the salt to make a soft dough.

Knead until smooth and elastic.

Let rise 1 hour, uncovered.

Divide dough in half and turn out onto oured cutting board.

Roll into two 12 x 18-inch rectangles.

Spread with lling.

Roll up rectangles from long end and slice each into 12 pieces, approximately 1 inch thick.

Place on 2 jelly roll pans 15 x 11 inch and let rise 2 hours on a rack, covered with a towel.

Bake at 400�F for 8 to 10 minutes.
