Breakfast Sausage and Cheddar Taquitos

- 6 uid ounces beaten eggs 6 breakfast sausage links 2 roma tomatoes 1 shallot 1 lime 5 cilantro sprigs 1 jalepeno pepper 4 small our tortillas
- 2 � ounces cheddar cheese slices.
Instructions

Place sausages on prepared baking sheet.

Bake until golden brown and sausage reaches a minimum internal temperature of 145�F, 12-15 minutes.

Core tomatoes, cube and dice.

Peel and mince shallot.

Halve lime, juice half and cut the other half into quarters.

Mince cilantro.

Stem, halve, de-seed, and mince jalepeno.

Halve tortillas, halve cheddar slices.

Combine tomato, jalepeno, shallot, lime juice, and cilantro to make pico de gallo.

Add salt and pepper to taste.

Place cheese piece on each tortilla.

Place a sausage on each tortilla and roll up tightly from point end to pointy end.

Place in a large pan on medium high heat, seam side down.

Cook until browned on two sides and cheese is melted, 2-4 minutes per side.

Remove from pan and wipe pan clean.

Return pan to medium heat.

Add 1 tsp olive oil and beaten eggs to hot pan.

Cook, stirring often, until scrambled.

Place taquitos and eggs on plate.

Garnish with remainig cilantro.

Ser ve with pico de gallo and lime quarters on the side.
